L-methionine, also known as L-methionine, is the left-handed body of methionine. Its chemical formula is C5H11NO2S. Its chemical property is colorless or white shiny flake crystal or white crystalline powder, with a slight special smell and bitter taste. The melting point is 280 ~ 281 ℃. It is unstable to strong acid and may cause demethylation. Soluble in water (5.6g/100mL, 30 ℃), warm dilute ethanol, alkaline solution or dilute inorganic acid. It is insoluble in ethanol and almost insoluble in ether. Toxicity: LD50 29mmol/kg (rats, intraperitoneal injection).
